Description:
Salmon meat actually has a white color. However, consumers do like the orange to reddish color named after him. The reason for this is the carotenoid Astaxanthin, which occurs naturally in the nutriment of salmon or in aquaculture is added to the nutriment. Price differences of up to $ 2 / kg can be achieved solely by color enhancement. For this reason, in salmon processing, the color is measured and documented with a CROMLAVIEW® color sensor. For color measurement, a suitable optics with a measuring distance of about 1 meter above the conveyor belt is attached. Due to the inclination of the optics, the gloss of the surface is largely excluded.
